Lemon Myrtle Honey
Use in marinades to give fish a slight lemon tang.
Combine Lemon Myrtle Honey with some lime juice, lemon grass and lime peel. Marinade the fish fillets in this mixture overnight. The next day remove the fillets and stir fry them in a wok. When ready add the marinade mixture and bring to the boil. Serve immediately - garnishing with a few pieces of lime.

Drizzled a little of this on cooked Atlantic salmon and it was just a delicious addition that complimented the fish.

I frequently use the lemon myrtle honey from Melita honey farm. I have it on top of my sweet chilli and lime marinated salmon and I highly recommend it. My son who lives on the Gold Coast has used it on lamb and he says that it is amazing.
