Cinnamon Honey Buns

These cinnamon buns are soft and sweet... but not too sweet! The lemony cream cheese frosting gives these rolls an extra freshness.

You can use any mild honey in this recipe... however for an extra cinnamon hit we recommend using Melita Cinnamon Honey.

For Dough: 

  • 1 cup milk, 
  • 14g yeast, 
  • 50g sugar, 
  • 2 egg yolks, 
  • 50g honey, 
  • 75g unsalted butter, 
  • 6g salt, 
  • 560g flour, 
  • 1/2 tsp ground cinnamon.

For Filling:

  • 60g unsalted butter, 
  • 150g brown sugar, 
  • 50g honey, 
  • 2 1/2 Tbsp ground cinnamon.

For Spread:

  • 60g unsalted butter, softened

For Frosting: 

  • 85g cream cheese, 
  • 60g unsalted butter, 
  • 185g icing sugar, 
  • 1/2 Tbsp lemon juice, 
  • 1/2 tsp vanilla extract, 
  • 1/8 tsp salt.

To make the dough Stir together the warm milk, yeast and sugar in a small bowl. Let stand for 10 minutes. Into the bowl of a stand mixer, fitted with the dough hook attachment, sieve the flour and cinnamon. Add the egg yolks, honey, butter and salt and mix together. Add the yeast mixture and beat until incorporated. Continue kneading for about 10 minutes.

Place the dough in a greased bowl, cover with plastic wrap and let sit in a warm spot for an hour to rise. The dough should double in size.

To make the filling Combine the butter, sugar, honey and cinnamon in a small bowl and set aside.

Punch down the risen dough and place on a floured surface. Roll out to 40cm by 50cm. Spread the softened unsalted butter evenly over the surface. Then spread the filling mixture evenly over the dough.

Roll the dough into a log along the longest side and cut into 12 even pieces. Place buns on a 40cm by 30cm baking tray lined with baking paper. Preheat the oven to 180°C. Place the tray in a warm location and allow the buns to rise until doubled in size. Once risen bake buns for 20 minutes.

Whilst the buns are baking make the frosting by whisking together all the ingredients. Once the cinnamon buns have been removed from the oven, and allowed to cool slightly, spread the frosting mixture evenly over the buns.... Enjoy!
