Late each summer the Leatherwood trees bloom deep within the vast untouched Tasmanian wilderness. The bees fly deep into the lush green forests, to places where man has never been and the Tasmanian Tiger is still thought to roam, where they collect the sweet nectar which drips abundantly from the pale white flowers.

This pure and aromatic honey is truly world class.

Melita Leatherwood Honey has a distinctively unique musky aroma and gritty, tannic texture that has no easy comparison. Candied and caramelised citrus fruits come to mind as do fresh rosemary and lavender. The flavours tingle in the mouth.

The unique flavours of Melita Leatherwood Honey are best appreciated on their own - spread on toast, stirred into a bowl of fresh yoghurt, or drizzled into a fine black tea.

Honey perfection.

Why is Leatherwood Honey so expensive?

In the summer of 2018-2019 vast areas of Leatherwood trees were lost in bushfires.

Leatherwood trees do not regenerate after bushfire. This loss will be felt for many years to come.

In addition to the fires, drought conditions resulted the trees producing very little nectar this season.

As there was very little nectar to collect very little leatherwood honey was produced.

We now need to wait until the blossoming of the Leatherwood trees - in the summer of 2019-2020, for the next honey harvest.

Love this honey - always a consistent smoothness that lends itself to sweetening a morroccan casserole to adding to coffee, or simply on toast. a nice medium flavour and color.
